Responsible for the daily operation of the kitchen and staff. Assist Executive Chef in creating and maintaining all menus and for the preparation, presentation, and service of these menu items. Work with the Executive Chef in setting the direction of the business in day to day operations as well as a plan to grow the business, drive sales and manage costs. Also assists in hiring and developing kitchen staff.

Position Duties:

Specific duties include, but are not limited to the following:

  • Interact with, direct, and supervise kitchen employees on a daily basis in a fair and dignified manner.
  • Interview, hire, train, develop and retain qualified kitchen employees.
  • Identify, address and document individual employee performance problems according to standard operating procedure. Use progressive discipline as necessary in conjunction with Human Resources.
  • Understand and follow the food allergy procedure and special orders/restrictions.
  • Perform a daily walk through inventory to prioritize product utilization.
  • Assign production duties to kitchen staff.
  • Perform pre-shift meeting.
  • Meet daily with appropriate Manager/Chef to coordinator and ensure production standards, menu cohesion, event coordinator and review kitchen needs.
  • Prepare ingredients needed for menu items and prepare food items according to prescribed recipes.
  • Maintaining excellent quality standards including consistency, presentation and timing.
  • Coordinate proper food storage according to standard operating procedure.
  • Communicate repair and maintenance needs to management.
  • Comply with all safety and sanitation guidelines and procedures.
  • Strong cooking, plating and presentation skills

 

Minimum Qualifications:

  • 3+ years of experience in a high volume kitchen.
  • Proven track record of demonstrative leadership in a kitchen
  • Flexible schedule and availability to work nights, weekends and holidays, as needed.
  • Ability to lift/and or move 50lbs
  • Successful ability to work in team environment
  • Maintain excellent quality standards including consistency, presentation
  • Ability to communicate in English, both in writing and spoken word
